Choc Chip & Oat Cookies

I found this recipe and thought the addition of oats would make this dessert just a little more healthy. The kids loved them and I don't think they even noticed the oats.

Double the recipe made approximately 45 cookies. We had 22 students for dessert and I wanted to give each student 2 cookies, however we learned an important lesson, DON'T FORGET ABOUT THE COOKIES IN THE OVEN and quite a few got burned. It would have been a perfect amount otherwise.

Chicken Pasta

Chicken Pasta Recipe
This is the first time I tried this, so I put all the ingredients in together. I have since decided that it would be worth trying plain chicken and pasta in the bake and some veggies on the side. Also if I had time I would make the sauce something creamy and cheesy.


20 students

2kg chicken thigh fillets chopped up and pan fried
1kg Penne pasta cooked
3 jars of creamy pasta sauce
500gm grated cheese, put some on top when baking and a little on top when serving

Mix pasta, chicken and sauce together. Put in oven (180ยบ) until cheese is golden brown.

Vegetables, either hot or cold as a side dish, eg. Chopped up vegetable platter, 1 celery, 4 carrots and 1 capsicum. Or 1kg of boiled peas carrots and corn

Second time trying this recipe here's what I used

6 large chicken breasts, chopped up and pan fried
1.5kg of pasta, cooked
4 jars of creamy sauce, I think I had 2xCheese and Bacon and 2xChicken and Mushroom 

and lots of cheese, mixed in and on top.


It made 3 dishes (see photo's) and the students ate pretty much all of it.

I had some carrots, celery and capsicum cut up on plate on each table and they ate most of that too. The chicken got the left overs.

Don't forget about the cookies when they are in the oven. Unfortunately some of our cookies got burned in Week One.

WEEK 3

Our first week cooking School Lunches. I kept everything as simple as possible to kick things off.
Hotdogs and Cupcakes. Hotdogs were simple, bun, hotdog, cheese and sauce. I had mustard too, but only one student wanted it, so I wouldn't bother in the future. The cupcakes were out of a packet (well 3 packets) in the future I hope to be making them from scratch, but with students of different ages and abilities, I wanted to keep it simple.
It was Valentines Day on this first lunch order day so I thought I would let the kids decorate the cupcakes with love hearts. I made 2 boxes of cupcakes earlier in the day so they would be cold, and we made the third box together with the kids and iced them later. I made cheaters fondant which is a great, quick substitute for the real thing and pre-cut a bunch of hearts (1 hour cooking time isn't long and goes by very quick so I try to be prepared) and had little edible balls (cashous) which went everywhere (oops). Anyway they were delicious and gorgeous and there were enough to share with the parents after assembly.

Cupcake Recipe

So, cupcakes are a pretty simple lunch dessert. At the moment I have decided to use packet mixes. This is simply because of time restrictions.

I have found it useful to prepare 3 batches (so there is enough for the lunch) and let them cool, so the kids can ice them. Then when I have the kids (for the hour) we make two more batches, so they actually get to cook. It is my goal that these extra cupcakes will be frozen and used for the afternoon tea at the Active After School Sports.

I also hope in the future to make cupcakes from scratch.

Hot Dogs



Hot Dog Recipe
For 20 students
             
So there is no real recipe for a hot dog, but here’s what we did.

4pk x 8 Hot Dogs
5pk x 6 Buns
Grated Cheese (approx 250gm)
Tomato Sauce

I also had mustard but wouldn’t bother in the future. There were extra hotdogs so I gave the kids that wanted seconds an extra ½.

Demolition has begun

I got into the garden last week and began demolishing the old garden.

We are now waiting to get the ground leveled then move a few of the extra heavy rocks and we can lay the new watering system, cover the ground with new gravel and start building the new gardens.
