So, today is the last day before the holidays. I thought it would be nice for SEEDS project to use up some of the left overs from cooking this term.
The students made ANZAC biscuits earlier in the year, so I made more with the left overs. There was 5 jars of strawberry jam in the fridge, so I made some Jam tarts, using this pastry recipe . Left over from the school sleep-over breakfast was 2 boxes of cornflakes, so I made Honey Joys
There are still some ingredients left over, so I will encourage the students to choose these recipes for their desserts when choosing Friday lunches.
Anzacs Recipe
Anzac Recipe
I made double recipe
and it made about 50 cookies
1C plain flour
2/3C sugar
1C rolled oats
125gm butter
1/4C golden syrup
1/2tsp bicarb soda
1/2tsp bicarb soda
1TBSP boiling water
Heat oven 108c, line baking tray
Sift flour and sugar into a large bowl, add coconut
and oats, mix well
Put butter and golden syrup in a saucepan. Stir
unitl butter is melted, remove from heat.
Dissolve bicarb in boiling water, add immediately to
butter mixture, it will foam up.
Add butter mixture to dry ingredients, mix well
Put 1TBSP size balls on baking tray and squash
gently with fingers, leave room for them to spread
Bake 20min or until lightly browned.
Remove from oven, cool and enjoy.

My garden is waiting for the beds to be built now. Although I have a little more of the water system to finish off, the garden beds can be installed. Unfortunately I have been sick and the weather has been stormy but we are still progressing.
Doug Don and the Wheelbarrow Puzzle
The Wheel Barrow Puzzle begins
The school was donated some wheel barrows, as grateful as we are, they were incomplete and all in a big muddle. Luckily the wonderful and clever Doug was able to assemble 2 wheel barrows. However I had to purchase new wheels as they were missing.

Roast Chicken and Veggies and Triple Choc Brownie
The chicken was yummy, I decided to sprinkle with a little Chicken Seasoning (masterfoods) just to give them some extra flavour.
I have made notes on the Chicken recipe about quantities. There were 30 students that ordered the lunch and 32 for dessert.
We made 4 boxes of Triple Choc Fudge Brownie and spread it over 3 baking dishes, they each got a rather large slice of brownie. We also made icing for it. I didn't make a recipe for this dish.
SEEDS Breakfast
Every year, before the first school camp, the student have a sleep over at school. I thought it was a great opportunity for SEEDS project to provide the breakfast the morning after. We kept it simple and had Raisin toast, normal toast, cocoa pops, cornflakes (which ended up as honey joys, see here for a post about the morning tea. We also had fruit and milo, the milo was a hit for sure.
Water System 1
I have started laying the ground work for installing the watering system, under our garden beds. I will map out what I have done and once the garden is finished, create a map with all the details, but here are some pics to illustrate.

Chocolate Biscuit Balls Recipe
Choc Biscuit Balls
For 25 students I am
trying 3 x the recipe
3pkt Milk Arrowroot biscuits
1C Cocoa Powder
3C Desiccated coconut (plus extra for rolling them
in)
3 tins Sweetened Condensed Milk
Crush Biscuits and place in mixing bowl
Add cocoa and coconut stir together
Add sweetened condensed milk
Take a small amount and roll into a ball and roll in
coconut
Put in fridge for 30min
Chocolate Self Saucing Pudding Recipe
Chocolate Self Saucing Pudding
To feed 20 students
(4 x recipe)
We had 26 orders and 4x the recipe
was heaps.
Melt 55gm butter in a microwave dish you are cooking
pudding in
Add 1C Caster Sugar
1/4C Cocoa
1 1/2C self raising flour
1/3 to 1/2C of Milk
1 Egg (optional, we left it out)
Mix well
Combine 3/4C Brown Sugar and 1/4C cocoa and sprinkle
over top of pudding then gently pour 2C of boiling water over the top of the
pudding
Cook for 12minutes in the microwave
I also bought 600ml of cream to whip and serve with
the pudding, which they ate all of.
Burrito's Recipe
Burritos Recipe
20 Students
Enough packets of burritos for 1 each and 2 for ½
the students
(so if 20 students order I’ll make at least 30
burritos)
100gm of chicken per person
1 lettuce
1/2kg tomatoes
500gm grated cheese
3 grated carrots (I try to squeeze extra vegies in)
Follow instructions on packet
We had 27 orders, I cooked 2.3kg of chicken (that
was 2 packets of breasts), and it wasn’t enough. I could have done 3kg.
Everyone did get fed, but they would have eaten more.
I had 5 pkt of 8 burrito’s and there were a few extra
as we ran out of chicken.
Also I used cos lettuce because it was on special,
we used 4 small cos lettuces, and there was none left over.
There were lots of tomatoes left over. I think I did
closer to 1kg, so 500gm would be plenty.
Instead of grating carrots we chopped them up and
served them on the side, the kids love them.
Second time making Burritos there were 20 orders, I cooked about 2.8kg of chicken, I had 5 boxes of Burritos, at least 500gm grated cheese, 1kg of tomatoes and 2 iceberg lettuce.
By letting the kids chop up the veggies they were bigger chunks which was good, as we used more.
They pretty much ate everything, there was seconds for those that wanted, and a couple had no chicken.
IMPORTANT: the seasoning mix for the chicken is spicy, so even though I made almost 4times the recipe I only used one packet of seasoning and it was plenty. Also we only used 2 packs of the salsa.
